Baked Gray Squirrel

Serves: 4
Prep Time: 1 hour, 30 minutes

4 squirrels, cut up
1 cup flour
1/2 tsp. salt
1 egg, beaten
cooking oil
1 1/2 cups water

Thoroughly wash squirrel. Combine flour and salt in plastic bag. Dip squirrel meat in beaten egg, then place in bag. Shake to coat meat evenly. Fry meat in hot cooking oil, browning on both sides. Drain oil from pan and add water. Cover meat and place in oven. Bake at 350 degrees for 1 hour or until meat is tender.
