Breaded Catfish with Bacon

1 catfish, skinned, gutted and beheaded, then split down backbone
1/4 cup seasoned bread crumbs
3/4 cup flour
Pinch of red pepper
Seasoned salt to taste
1/2 teaspoon garlic powder
3 strips bacon
Butter

Fry bacon until crispy, then set aside. Use the same skillet to fry fish; if you don’t have enough bacon grease, add some butter. Mix bread crumbs, flour, garlic powder, pepper and seasoned salt in a large plastic storage bag. Drop fish pieces into bag and shake to cover evenly. Put breaded pieces in pan with hot oil and cover. Cook for about 10 minutes. Uncover, turn fish pieces and cook uncovered for about 10 more minutes. Serve with mashed potatoes. Crumble bacon over spuds for a double treat.
