Corn Flakes Fillets

Fish fillet
Flour
2 eggs, beaten
Crushed corn flakes
Seasoned salt
Ground red pepper
Lemon wedges
Cooking oil
Pepper Jack cheese, sliced

Cover a cookie sheet with foil and rub foil with cooking oil. Put flour, eggs and crushed corn flakes in separate shallow dishes. Squeeze the juice from a lemon wedge over each fillet and dip first in flour, then in egg, then in corn flakes. Arrange fillets on cookie sheet and sprinkle with spices. Bake for 20 minutes at 400 degrees, remove from oven and sprinkle with more lemon juice, and then add a slice pepper jack cheese to each fillet. Reduce heat to 350 degrees and bake 20 more minutes.
