Fricasseed Squirrel

Serves 3-4
Prep Time: 15-20 Minutes

3 Squirrels, Cut Up
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup flour cooking oil
1 cup meat bouillon
3 bacon slices, minced
2 tsp. lemon juice
1 celery stalk with leaves
1/2 tsp. thyme

Rub Squirrel pieces with salt and pepper and roll in flour. In heavy skillet, fry meat in cooking oil with bacon until brown on all sides. Add remaining ingredients. Cover and let simmer for 1 hour until tender. Serve with rice or noodles.
