Smoked Wild Turkey

Prep Time: 8-12 hours
1 turkey 2 medium onions,
1 T. salt quartered

Rinse turkey with cold water. Rub inside and out with salt. Quarter onions and put inside bird. Fill water pan underneath bird. Smoke 8-12 hours, until leg moves easily in joint or meat thermometer reaches 180 degrees. Keep pan filled with water.
