Squash and Squirrel

Serves 4
Prep Time: 40 Minutes

2 squirrels
3 T. butter
1/2 medium onion medium, sliced
2 cups bouillon
4 small squash (about 2 1/2 cups), sliced

Roux:
1/2 cup butter
1/2 cup flour

Melt butter in frying pan. Add onions and saute until transparent. Add squirrels, cook 3-4 minutes each side. Put squirrels and onions in 3-qt. casserole. Add bouillon and squash. Cover. Micro on 70 percent 10 minutes. Meanwhile, make roux. Melt butter in saucepan on stove. When hot, add flour. Reduce heat and cook until caramel colored, stirring constantly. Remove squirrels from bouillon if too thick. Return squirrels to mixture. Micro on 70 percent or roast setting for 10-12 minutes until juices of squirrel run clear.
